Mornings at our house are always too short. Between my love for the snooze button, surprise nursing sessions when my son wakes up early & trying to find an outfit for work, there isn’t much time left for packing a healthy lunch. We’ve made due for the last few months on frozen microwave lunches but those are getting very old and I don’t like eating so much sodium every day. I knew there had to be another way to make homemade lunches to fit my schedule and budget… let the researching begin!
Whenever I’m faced with challenging wife & mommy moments, I do what any girl would do… reach out to all my favorite bloggers! After only a few moments of searching the world of mommy blogs I was able to find a few great ideas for our lunch dilemma.
Favorite Freezer Foods has a fantastic post about frozen sandwiches, including great advice about the do’s & don’ts of freezing sandwiches. After reading through many inspirational ideas I decided to start with frozen Peanut Butter & Jelly sandwiches… that way I wouldn’t bite off more than I could chew with my first freezer sandwiches.
Freezer Peanut Butter & Jelly Sandwiches
Supplies Needed: Bread, Peanut Butter, Jelly, Pen (for labeling bag) & freezer baggies.
- Start with a thin coat of peanut butter on both pieces of bread. This prevents your bread from becoming soggy after being thawed. (You can get the same effect with a coat of butter, the natural oils help repel water.)
- Next, put your desired amount of jelly on top of the peanut butter & assemble your sandwiches in labeled baggies.
- Voila! Frozen peanut butter jelly sandwiches for my lunches at work this week.

Update: I ate one of my frozen PB & J sandwiches today at lunch. I got it out of the freezer at 7am and ate at 12:11. It was PERFECT! Not soggy at all and tasted great.
